Dried Malt Extract (DME) is a wort that has had almost all of its water taken out. See wort. The way DME is made is very similar to how instant coffee is made. The hot wort is sprayed into a heated chamber through an atomizer. Blowers make strong airflows inside the chamber.

You should always have dry malt extract (DME) in your supplies, whether you make all-grain beer or not. Extract and partial-mash brewers will use some kind of malt extract, whether it's dry or liquid, to make their beers.
For a light-bodied beer, 1 pound of malt extract (syrup) per gallon of water is a good rule of thumb. With 1.5 pounds per gallon, the beer is richer and has more body. When one pound of malt extract syrup is mixed with one gallon of water, the gravity is usually between 1.034 and 38. About 1.040 to 43 will be made from dry malt.
Sugar is taken out of malted grain to make malt extract. Homebrewers use this extract that has been boiled down and concentrated to make wort.
