Cassia cinnamon contains 95% of its oil of cinnamaldehyde which gives cassia cinnamon a very strong nutty taste than Ceylon. Physically, Cassia Cinnamon is dark brown towards red, while Ceylon Cinnamon is light brown, Ceylon color is lighter. When touched, Cassia cinnamon is harder than Ceylon and hard to destroy, while Ceylon cinnamon is more brittle, and it is very easy to break or crush. Please note, the price is according to its grade and negotiable.
