Dried Split Ginger

Ginger is the rhizomes or root of the Zingiber Officinale family. Nigeria has two varieties, The Tafin Giwa yellow and Yatsun Biri, black. The former has higher yeild per hectares while the latter has higher monoterprene which gives it strong aroma and pungency. Therefore it is considered in term of higher oil and oleoresine contents. It's important in the global market because if it's strong aroma, pungency, high oil and oleoresine contents. Ginger is harvested as root, machine washed, sliced or split and sun-dried to moisture of 8% to prolong it's shelf life. I
