Dear Madam/Sir, I am reaching out to explore whether your expertise and equipment can facilitate the fully automated manufacturing of shelf-stable convenience Attiéké at an industrial scale, in the form of instant food products. Attiéké is a cassava-based semolina from Côte d’Ivoire, serving as a staple dish for millions of consumers in West Africa and the diaspora. Traditionally, its production is mostly handmade, leading to quality deterioration over time due to an increase in lactic acid bacteria load and pH changes, regardless of preservation methods. Our innovative approach utilizes boil-in-bag packaging, allowing Attiéké to be produced similarly to wheat couscous, which shares many characteristics with Attiéké.
