Cocoa Beans Details

Cocoa or cacao is the fermented and dried seed of the theobroma cacao. The cocoa bean is contained in a leathery rind/ membrane of about 2 -3cm ( depending on the variety) called the pod. Each pod contain 30 -50 beans surrounded by muciginous pulp. The pulp has lemonade taste the bean is pale lavender to dark brownish purple. Due to the heat of fermentation the purple hue turns brown with an adhered skin which includes remnants of the fruity pulp. They fall off once the beans are roasted by winnowing.
